In a food processor blend together:
12-14 pitted Kalamata olives
1 Tablespoon capers with some of the juice
1 sliced shallot (or 2 Tablespoons minced onion)
1 teaspoon olive oil
(This makes enough for 2 sandwiches. You can also use a prepared tapenade) To:
2 thick slices of crusty sourdough bread
Spread one side of each with :
A little butter (or spray with olive flavored cooking spray.)
Put the slice butter side down on a griddle or cast iron skillet.
Spread the face up side with some of the tapenade. Then top it in this fashion with:
2 slices HoneyBaked smoked turkey breast
1 slice smoked mozzarella cheese
fresh basil leaves
Toasted pine nuts
1 slice smoked mozzarella cheese
The second slice of bread spread with a little more of the tapenade with the greades side up. Heat the skillet to medium and use a bacon press to weigh down the sandwich (Or Press on it with a spatula) Cook for 4 to 5 minutes. Turn samdwich over and continue to cook until cheese is melted-another couple of minutes.
Recipe is for 1 sandwich. Tapenade is enough for 2.
