We start with only the finest grade, premium quality bone-in hams. After all, you can't make the best honey hams if you start with an inferior product. Using bone-in hams delivers more moisture and flavor because the bone helps keep the ham moist during the smoking process. Plus, Harry used his special marinade before smoking each ham for up to 24 hours over choice hardwood embers. He knew that his method would give superior results when it came to moistness, juiciness and tenderness of the meat. He also knew that the slow smoking process would impart the most flavor throughout the ham. That's why, even after 50 years, we haven't changed a thing.

Spiral slicing our honey hams to perfection

While he wanted to marinate and smoke each ham on the bone, Harry invented a unique spiral slicer, which he later patented, so that carving around a bone wouldn't be an inconvenience for his customers. His slicer made one continuous spiral slice in the ham all the way down to the bone. It was the perfect way to slice his honey hams because it resulted in uniformly sized portions, made an attractive presentation on the serving plate and made it easy to separate ham slices into sections, some of which could then be saved for later enjoyment.
