Preparation
Begin by making the pimento cheese. Hand-grate the block of cheddar into a large bowl. Hand-grating the cheese is important. If you try to substitute pre-shredded cheese, it will not be as good and everyone will know.
Top cheddar with diced pimentos, mayonnaise, cream cheese, red pepper flakes, a couple of dashes of hot sauce, and a pinch of salt and pepper.
With a spatula, gently fold all ingredients together until well mixed. Refrigerate for 30 minutes.
While waiting on your pimento cheese to come together in the fridge, butter your white bread. Use approximately 1 TSP of the softened butter on one side of each piece, making sure that you evenly coat it from one edge to the other.
Preheat your oven to 350 degrees.
It's time to build your sandwiches. Place 1 piece of bread, butter side down, on a baking sheet. Top bread with 2 TBL of pimento cheese and spread across bread with the back of a spoon. Top pimento cheese with sliced ham. Close sandwich with another piece of bread, making sure the buttered side is facing up. Repeat for remaining sandwiches, placing finished sandwiches on the baking sheet.
Heat a pan over medium heat on your stovetop. Once the pan is hot, brown sandwiches for 1 minute or so on each side. Place browned sandwiches back on the cookie sheet.
Once all sandwiches have been browned in the pan, place baking sheet with sandwiches into preheated oven. Cook sandwiches in oven for 8-10 minutes or until cheese has melted.
Let cool so that you don't scorch the top of your mouth with hot cheese (we've all been there and we never want to go back).
While you wait for the sandwiches to cool down, prepare to have your mind blown. We're serious, they're that good.
