Preparation

Begin by preheating the oven to 350 degrees.

Grease a 9x13 baking dish with the 2 TBL of butter.

Whisk together the eggs, milk, salt and pepper.

Pour eggs into buttered baking dish and bake for 18-20 minutes or until center of eggs are just set. You do not want to overcook your eggs during this step as they will be cooked again when you reheat your sandwiches.

Once eggs are cooked and are cool enough to handle, cut into 12 equally-sized squares.

Now that the eggs are done, it's time to build your sandwiches.

Cut the English muffins in half and set them out open-faced on your workstation.

Top the bottom half of each English muffin with an egg square.

Top the egg with a couple of pieces of Honey Baked Ham.

Top the ham with a piece of your favorite cheese.

Top the cheese with the top half of the English muffin.

If you want to enjoy one of these sandwiches immediatley, pop it into the oven at 350 degrees and bake for 5 minutes.

Wrap the remaining sandwiches individually in tin foil, plastic wrap or wax paper and place in a freezer safe, resealable bag. They will last in the freezer for 1 month.

Reheat the sandwiches in the microwave or oven and enjoy throughtout the week.
