HONEY BAKED TURKEY STIR FRY

This delicious dish combines Honey Baked Turkey with loads of fresh veggies and an addictive sauce that is absolutely packed with flavor. It's a great way to use up leftovers but tasty enough to make a special trip to HoneyBaked to grab some turkey and get cooking!

Ingredients

Honey Baked Roasted Turkey (chopped)

1 LB

Snow Peas (destemmed)

1 CUP

Broccoli Florets (chopped)

1 CUP

Asparagus (chopped)

1 CUP

Carrots (thinly sliced)

1 CUP

Yellow Onion (sliced)

1 CUP

Red Bell Pepper (chopped)

1 CUP

Fresh Ginger (minced or grated)

1 TBL

Garlic (minced or grated)

1 TBL

Soy Sauce

3 TBL

Oyster Sauce (optional)

2 TBL

Chicken Stock

1.5 CUPS

Cornstarch

4 TSP

Brown Sugar

2 TBL

Sesame Oil

1 TSP

Vegetable Oil

2 TBL

Salt

To Taste

Pepper

To Taste

Green Onion ( thinly sliced)

To Garnish

Preparation

Begin by making the stir fry sauce. Combine the cornstarch, soy sauce, oyster sauce, brown sugar, sesame oil and chicken stock in a medium mixing bowl and whisk vigorously until combined. Set aside.

Heat vegetable oil in a wok or large pan over high heat. Once the oil is hot, add the garlic and ginger and cook for 30 seconds, stirring constantly so they do not burn.

Add the onions and cook for 1 minute or until they begin to soften, again stirring constantly.

Add the broccoli, asparagus, red bell pepper, carrots, and snow peas and cook for 1-2 minutes, stirring constantly.

Add the Honey Baked Turkey to the pan.

Add the sauce to the pan and cook for another 2-3 minutes, stirring (you guessed it) constantly, until the sauce begins to thicken.

Remove the pan from heat and serve over your favorite base. We enjoy it with white rice.

Top with sliced green onions, toasted sesame seeds and any other garnishes you enjoy.
