Preparation
Begin by leaving the sliced brioche in refrigerator overnight to stale a bit.
When you are ready to prepare the stuffed French toast preheat your oven to 350 degrees.
Place the eggs, milk, salt and pepper in a large mixing bowl and whisk to combine.
Using a sharp, thin-bladed knife, carefully cut an opening into each slice of bread to form a pocket, leaving about a 1/2 inch around the edges.
Spread a teaspoon of mustard on one side of the pocket you just created. Next, gently place a slice of ham and cheese inside of the pocket. Repeat with the remaining slices of brioche. Nicely done. The french toast has officially been stuffed.
Place all of the stuffed pieces of brioche into a shallow dish. Pour the egg mixture over everything and let sit for 5 minutes, flipping each piece over once.
Heat a frying pan over medium heat. Add half of the olive oil to the pan.
When the oil is hot, add 2 of the stuffed bread pockets to the pan and cook each side until golden brown, about 2 minutes. Remove the bread from the oil and place on a baking sheet. Repeat with the remaining oil and stuffed bread pockets.
Place the baking sheet in the oven and cook for 10 minutes or until the cheese is melted.
Remove from the oven, drizzle with maple syrup and sprinkle with powedered sugar.
