HONEY BAKED HAM AND JAM SANDWICH

This sandwich was inspired by a childhood snack my mother would make. When we were being especially good, or maybe as a way to get us to sit still for a few moments (I can’t exactly remember), my mom would make us ham rollups. I bet several of you are already nodding your heads. Nothing complicated here, simply a slice of ham, topped with a schmear of cream cheese, rolled up and sliced into bite-sized pieces. The saltiness of the ham and the creaminess of the cheese were the perfect combination. This is a grown-up sandwich version of that same combination.

Preparation

This recipe could not be easier. Cut your loaf horizontally from end to end, like a submarine sandwich. Spread hot pepper jelly on top of bottom half of loaf. Top with slices of Honey Baked Ham. Top ham with arugula. Spread cream cheese on bottom of top half of loaf and place on top of arugula. Cut into segments and serve. If you do not care for spicy, feel free to substitute hot pepper jelly with a non-spicy jam. Fig jam works especially well here.
